S'more Bars

This simple and delicious S'more Bars recipe entertains the flavors of S'mores (combining the words, "Some More", likely meaning once you eat one, you will want some more!), treats made
with roasted marshmallows and milk chocolate sandwiched in between two graham crackers. This bar recipe will produce a large number of servings in much less time, without everyone having to wait their turn around the campfire. Simply heat and stir in a skillet and press into a casserole dish, then cool until they're set and ready to cut!

These irresistible chewy and crunchy dessert bars are prepared similarly to Chocolate Cookie Crispies, yet are made with graham cereal squares (such as Golden Grahams) instead of the puffed rice cereal, as well as some chocolate chips, resulting in a different flavor and texture (both are delicious!). This bar recipe can also be found on the Candy page, because these sweet treats fall somewhere in between a candy and a cookie and can pass for either category. S'more Bars only take minutes to make, and if you don't keep your eyes on them, they will be gobbled up very quickly!

Ingredients

  • 1/2 bag (about 6 oz.) milk chocolate chips
  • 8 oz. (3 cups) graham cereal squares
  • 1 bag mini marshmallows
  • 2 tablespoons butter

Directions

Grease a 9x9-inch casserole pan with butter. Set aside.

Heat butter and marshmallows in large skillet on medium-low heat until melted and blended. Add cereal squares and stir to thoroughly coat, working quickly (marshmallows start to harden fairly quickly, so the trick is to stir and form squares as quickly as possible). Add milk chocolate chips and quickly mix until blended. (Chocolate chips will melt but not thoroughly blend, as shown in picture.)

Transfer mixture into buttered casserole dish and press down with a buttered rubber spatula until fairly dense. Allow to cool for about 1 hour or until hardened. Cut into desired square sizes and serve.
