Wheat Germ Crunchies are crunchy cookies made with all sorts of wonderful healthy ingredients.
These healthy cookies are made with whole wheat flour, oats, wheat germ, shredded coconut and cereal flakes (you can use any type of cereal flakes, such as corn, oat or bran). A few butterscotch morsels (butterscotch chips) are added to give these cookies a little boost of sweetness and flavor. You can omit the butterscotch chips if you prefer a less sweet cookie, though the butterscotch compliments these cookies nicely and will encourage your kids to eat these fiber-rich cookies!. Should you choose to leave out the butterscotch chips, the shredded coconut will still provide a nice dose of sweetness for these cookies. If you prefer your cookies more on the chewy side, simply remove the cookies from the oven 2-3 minutes early (after 12-14 minutes of baking). You may want to bake one cookie first to determine how long you will want to bake them to achieve the perfect chewy texture.

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 1/2 cup uncooked oatmeal
  • 1 cup cereal flakes (corn, bran, oat, etc.)
  • 3/4 bag of butterscotch morsels (butterscotch chips)
  • 1 cup wheat germ

Directions

Preheat oven to 350° F.

In a small mixing bowl, whisk together flour, baking soda and baking powder. Set aside. In an electric mixer bowl, combine butter, egg, vanilla and sugar and beat until creamy. On low speed, gradually add flour mixture until well-blended (stop once to scrape sides and bottom of bowl to incorporate all ingredients). Remove bowl from electric mixer and manually stir in wheat germ, coconut, oatmeal, butterscotch chips and cereal flakes. Roll into 1 1/4-inch balls and place on a cookie sheet 2 inches apart. Bake for 15 minutes or until cookies turn a light golden brown color. (Tip: If you prefer a chewier cookie, remove from oven 2-3 minutes earlier.)
