Most of us have at one time or another tried Rice Krispies Treats and are very familiar with that chewy marshmallow goodness mixed with the light and airy, crispy and crunchy texture of puffed
rice cereal. This recipe takes this tasty treat to a whole new level, adding even more flavor and texture, and topping it off with a delicious cookie filling frosting!

Chocolate Cookie Crispies takes puffed rice cereal, mixes it with marshmallows and broken bits of chocolate sandwich cookies (such as Oreos), and tops it off with an icing that is much like the filling you find in sandwich cookies. These bars are sweet and delightful and will not last long. If you like a little less sweetness in your desserts, you can omit the frosting, and these chewy and crispy treats will still be a huge hit. You can use any type of crispy puffed rice cereal with this recipe, including the healthier brown rice version, and can use any brand of chocolate sandwich cookie as well (if you prefer vanilla sandwich cookies, those can be used as well)

Ingredients

  • Bars
  • 3 tablespoons butter
  • 1 package regular-sized marshmallows
  • 5 cups puffed rice cereal (brown puffed rice cereal works as well)
  • 1 1/2 cups broken chocolate sandwich cookies

  • Frosting
  • 1/4 cup (1/2 stick) butter (room temperature)
  • 2 cups sifted confectioners' sugar
  • 2 teaspoons vanilla extract

Directions

Frosting
Place all ingredients in an electric mixer bowl, and beat at high speed until very creamy. Set aside.

Bars
In a large skillet, melt butter on low-medium heat. Once butter has melted, add marshmallows and stir continuously until completely melted and mixed with butter. Add rice cereal and cookie pieces, and stir until thoroughly mixed. Quickly remove mixture and place in buttered casserole dish. Using a rubber spatula, press down on the rice cereal mixture until it the surface is flat (Hint: Spread a little butter on the spatula so it won't stick to the rice cereal mixture). Allow to cool completely. Once cooled, spread frosting evenly over top. Cut into pieces of any shape and size according to your preference.
