This Honey Mustard Dressing recipe produces a light, smooth and uniquely tangy salad dressing with a pretty sparkly, golden color
that will make any leafy green salad glisten! This salad dressing recipe is used with the Spinach Salad with Honey Mustard recipe, but will taste equally delicious tossed with any number of leafy green salads. This dressing takes only moments to make, using a complimentary blend of Dijon mustard, honey, freshly squeezed lemon juice, peanut oil and a little salt. Perhaps its the addition of peanut oil that makes this tangy dressing unique from other honey mustard dressing recipes. When making your salad, whether it be with fresh spinach, romaine lettuce, red leaf lettuce, butter lettuce or other leafy salad greens, allow yourself to be creative by adding some of your favorite salad ingredients, such as avocado, tomato, hard-cooked eggs, bacon bits, sunflower seeds, etc.

Ingredients

  • 4 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/3 cup freshly squeezed lemon juice
  • 7/8 cup peanut oil
  • 1 teaspoon salt

Directions

Whisk all ingredients together in a small mixing bowl and toss with spinach or other leafy greens.
