Apple Custard Pie

Apple Custard Pie

Apple Custard Pie has the wonderful traditional flavor of apple pie, yet has the added flavor of a creamy sour cream, brown sugar and egg filling. The crust is made with whole rolled oats, brown
sugar and butter which gives this pie a crumbly texture and wonderful flavor. The topping, also made with a mixture of whole rolled oats, brown sugar and butter has a crunchy and crumbly texture that crisps perfectly in the oven, and a flavor that is unique to the traditional apple pie crust.

This Apple Custard Pie recipe is easy to prepare, because the crust requires no rolling like traditional pie crusts. Simply combine the ingredients and press into a pie pan! You can use one type or a mixed variety of apples for this pie, such as Granny Smiths, Galas, Golden Delicious, Jonathans or Pippins. Just like traditional apple pie, Apple Custard Pie is delicious with a large scoop of vanilla ice cream and/or a dollop of whipped cream. It is fabulous warm, right out of the oven, cooled to room temperature or chilled in the refrigerator. You can also easily reheat slices of pie in the microwave if your pie has been chilling in the refrigerator.



  • Pie Crust
  • 1 1/4 cups all-purpose flour
  • 3/4 cup uncooked rolled oats (quick or old fashioned)
  • 1/4 cup firmly packed brown sugar
  • 1/8 teaspoon salt
  • 1/2 cup butter, melted
  • 1 tablespoon water
  • 1 teaspoon vanilla extract

  • Filling
  • 1 8-oz. carton sour cream
  • 2/3 cup firmly packed brown sugar
  • 1/4 cup all-purpose flour
  • 2 eggs, slightly beaten
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 4 cups peeled and thinly sliced apples

  • Topping
  • 1/4 cup uncooked rolled oats (quick or old fashioned)
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup butter


Preheat oven to 375° F.

Pie Crust
In an electric mixer bowl, combine flour, oats, brown sugar and salt. Mix briefly to blend. Add butter, water and vanilla and mix again until thoroughly blended. Pour mixture into a 9-inch glass pie baking dish. Press firmly into bottom and sides of pie dish, forming a 1/4-inch rim around the edge (this will help control the amount of pie crust on the bottom). Bake 12-15 minutes or until light golden brown. Set aside and cool while preparing apple filling.

In a large mixing bowl, combine sour cream, brown sugar, flour, eggs, cinnamon and nutmeg and mix until thoroughly blended. Add apple slices and toss until all apple slices are coated. Pour apple mixture into pie crust, mounding toward center as necessary to avoid spilling the filling over the sides.

Combine rolled oats, brown sugar and flour in a medium bowl and mix until consistency resembles coarse crumbs. Sprinkle evenly over apple filling.

Bake in oven for 50-60 minutes or until knife inserted in center moves smoothly through apples and comes out clean.

Serve warm or chilled with or without ice cream and whipped cream. Refrigerate left-overs. If you prefer a warmed slice of pie, simply microwave (1 slice at a time) for approximately 1 minute (more or less, depending on your microwave and the size of the pie slice).
