Mixed Greens with Pear, Feta and Pecans

Tips:   An apple pear or other small round-shaped pear may be used (make sure pears are ripe yet fairly firm). Plain or herbed feta cheese may be used. Dried cranberries or pomegranate seeds may be used.

This healthy salad recipe features mixed baby greens tossed with a fresh, tangy and mildly sweet
homemade dressing made with olive oil, red wine vinegar, honey, orange juice, finely chopped pecans and a little seasoning. The mixed greens are tossed with this healthy salad dressing, then arranged on individual serving plates. Top the mixed greens with some pear slices, crumbled feta and dried cranberries (or pomegrante seeds), and your gorgeous healthy salad is ready to be devoured!

When choosing a pear for the salad, a small, round shape will produce the best sized slices for the salad. Also make sure the pear is ripe yet slightly firm. The photo above shows this salad made with dried cranberries, which perfectly accompanies the pear slices, though pomegranate seeds will work just as well and will provide that nice accent of bright red color. Plain feta cheese or any herb style feta cheese will also work well with this salad. (The above photo shows this salad made with tomato basil flavored feta cheese.) Ingredients

  • Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons orange juice
  • 3 tablespoons finely chopped pecans
  • 2 tablespoons honey
  • salt and pepper (to taste)

  • Salad
  • 6 cups loosely packed baby mixed greens
  • 1 apple pear or small other type of pear (ripe but fairly firm)
  • 1/3 cup dried cranberries (or pomegranate seeds)
  • 1/3 cup feta cheese (plain or herb flavored)

Directions

Dressing

In a small mixing bowl, whisk together olive oil, vinegar, orange juice, pecans, honey, and salt and pepper. Set aside.

Salad

To a salad mixing bowl, add baby mixed greens. Drizzle dressing over greens and toss gently to coat.

Divide the salad among 4 salad plates. Core pear, then slice in half vertically. Slice each half into 1/3-inch wide wedges. Top each salad serving decoratively with pear slices, then sprinkle over top with dried cranberries (or pomegranate seeds) and feta cheese. Serve immediately.
