Chicken Salad with Grapes and Apples

Crunchy Apple Chicken Salad

Who doesn't love a fresh, crisp and healthy salad? Salads can be made with such a large variety of ingredients and salad dressings, that having a salad for lunch or dinner can always be a new delicious experience!

This healthy chicken salad recipe combines crisp romaine leaves, tender chunks of chicken breast, red grapes, bite size chunks
of Granny Smith apples, grated carrot and walnut pieces, all tossed with a simple light and creamy dressing made with low-fat or non-fat mayonnaise and non-fat or low-fat sour cream (regular mayonnaise and sour cream may be used, if desired, though low or non-fat versions are recommended). The apple chunks are tossed with some freshly squeezed lemon juice before adding them to the other ingredients. The lemon juice not only adds a hint of fresh citrus flavor to the salad, it helps to prevent the apples from turning brown.

This Chicken Salad with Grapes and Apples recipe is great anytime, and is especially wonderful on warm or hot days when you're craving something light, cool and refreshing. If you're more of a pecan fan, feel free to use pecans instead of the walnuts. Ingredients

  • 3 1/2 cups chopped (bite-size pieces) granny smith apples
  • 2 tablespoons lemon juice
  • 2 cups red grapes
  • 1 celery stalk, diced
  • 1 large carrot, shredded
  • 3 cups chopped romaine lettuce
  • 1 10 or 12-oz. can of chicken breast
  • 1/3 cup walnut pieces
  • 1/2 cup non-fat or low-fat mayonnaise
  • 2 tablespoons non-fat or low-fat sour cream

Directions

In a large mixing bowl, gently toss apples with lemon juice. Add grapes, celery, carrot, romaine, chicken and walnuts, and gently toss again to combine.

In a separate small mixing bowl, combine mayonnaise and sour cream and stir until blended, then add to the salad and toss again gently until evenly coated.
