Buttermilk waffles are wonderful, because the buttermilk adds a unique flavor of its own that balances the sweetness that comes from the syrup, powdered sugar or whatever topping you

choose to indulge in. Buttermilk also has a creaminess that gives these waffles a nice texture.

You can use any type of waffle iron for this recipe (and there are plenty styles out there), whether it be square, round, heart-shaped or Belgian style, as shown in the above photo.

Buttermilk waffles do not take long to make, as the ingredients are quickly mixed in the blender, and in about only 5 minutes, you'll have a hot, crispy and golden brown breakfast that serves 4-8 people, depending on appetites and what else you might be serving with the waffles (eggs, bacon or sausage,

fruit, etc.). Another terrific aspect of these waffles is that any left-over waffle batter can be stored in the refrigerator until the buttermilk's expiration date, and you can easily make fresh, cooked waffles in less than 10 minutes any morning until the batter is gone!

Ingredients

2 eggs

2 cups buttermilk

1 teaspoon baking soda

2 cups sifted flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup butter, melted

optional toppings: syrup, fruit sauce, whipped butter, whipped cream, powdered sugar (see recipe for more topping options)

Directions

Place eggs in a blender and blend until mixed. Add buttermilk and melted butter, and blend again until mixed.

Into a medium mixing bowl, sift together flour, baking soda, baking powder and salt. Add flour mixture to blender, and blend until well mixed and creamy.

Spray a waffle iron with nonstick spray or brush with oil, heat waffle iron, then pour mixture into waffle iron and bake until waffles are golden brown.

Serve, using any of the following garnishes:  Maple or other flavored syrup, whipped butter, powdered sugar, whipped cream, fruit sauce and/or fresh fruit, chocolate sauce, molasses or even ice cream!

Note:  Leftover waffle batter can also be used to make Buttermilk Pancakes.
