Buttermilk Waffles

Yield: About 8 5-inch square waffles or 4 large waffles
Cook Time: 4-7 minutes
Tips: Optional garnishes: Syrup, powdered sugar, whipped cream, fruits and fruit sauces. (See recipe for more ideas.)
Suggestion: Delicious served with fresh fruit, such as sliced bananas, strawberries and/or blue- berries. Also great with a side of bacon and/or sausage.
Ingredients
  • 2 eggs
  • 2 cups buttermilk
  • 1 teaspoon baking soda
  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted

Optional toppings: syrup, fruit sauce, whipped butter, whipped cream, powdered sugar (see recipe for more topping options).
Directions
Place eggs in a blender and blend until mixed. Add buttermilk and melted butter, and blend again until mixed.

Into a medium mixing bowl, sift together flour, baking soda, baking powder and salt. Add flour mixture to blender, and blend until well mixed and creamy.

Spray a waffle iron with nonstick spray or brush with oil, heat waffle iron, then pour mixture into waffle iron and bake until waffles are golden brown.

Serve, using any of the following garnishes: Maple or other flavored syrup, whipped butter, powdered sugar, whipped cream, fruit sauce and/or fresh fruit, chocolate sauce, molasses or even ice cream!

Note: Leftover waffle batter can also be used to make Buttermilk Pancakes.
