Peanut Butter Kisses

Peanut Butter Kisses
Yield:   42-44 cookies
Cook Time:   8 minutes per batch
Tips:   If using a convection oven, bake at 350° (rather than 375°). You can use any variety of chocolate kisses.
Peanut Butter Kisses are also sometimes referred to as Blossom Cookies, Peanut Blossom Cookies, Peanut Butter Blossom Cookies, Kiss Cookies or Hershey Kiss Cookies (and there may be even more names).
This Peanut Butter Kisses cookie recipe is very easy to make and a fun cookie to let the kids help with (just keep an eye on those chocolate kisses to make sure they don't disappear before they reach the cookies!).

Peanut Butter Kisses feature the famous flavor combination of peanut butter and chocolate. The cookies are nice and chewy, and are rolled in granulated sugar, providing a nice outer crunch (photo shows these cookies coated with coarse raw sugar, which gives them a nice crunch and impressive appearance). Once baked, a milk chocolate kiss is placed on top of each cookie and gently pressed down to form a slight indentation in the center of the cookie. (You can use any variety of chocolate kisses.) The warmth of the cookies slightly melts the chocolate kisses, helping them to stick. In a very short time, you'll have created a large batch of decorative and delicious cookies.

Ingredients

  • 1/2 cup smooth peanut butter
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 teaspoon soda
  • 1 3/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • chocolate kisses

Directions

Preheat oven to 375° F (or 350° F for convection ovens).

In an electric mixer bowl, combine peanut butter, butter and brown sugar. Beat until creamy. Add milk, vanilla, egg and sugar. Beat again just until combined.

In a medium mixing bowl, sift together flour and soda. Gradually add flour mixture to butter and sugar mixture on low speed until thoroughly combined. Form dough into 1-inch balls, rolling each ball in granulated sugar (coarse raw sugar or regular granulated sugar). Place on baking sheet 2 inches apart. Bake for 7-8 minutes or until cookies turn a light golden brown in color. (While cookies are baking, unwrap chocolate kisses so they will be ready to place on the cookies as soon as the cookies come out of the oven.)

Place cookies on cooling rack and while cookies are still warm, top each cookie center with a chocolate kiss, pressing down very gently to make a slight dent. (Warmth of the cookies will slightly melt the bottom of the chocolate kisses, helping them stick to the cookie.)
