Tips:  For a creamier stroganoff, additional sour cream may be added.

This recipe for beef stroganoff features lean ground beef rather than chunks of beef, which not only makes this recipe easy, it gives it a wonderfully tender texture. If your
kitchen is stocked with some ground beef, sour cream and pasta or rice, you won't need to make a trip to the grocery store to put this skillet recipe together. The photo above shows Ground Beef Stroganoff served over whole wheat rotini (spiral or corkscrew-shaped pasta), though you certainly can use any type of pasta you prefer. If you don't have any pasta handy, this dish is just as delicious with any style of rice. Ground Beef Stroganoff is a quick and easy skillet dish, made by browning some ground beef, then adding chopped onions to cook briefly with the beef. An easy butter and flour roux is created in minutes, then mixed with some beef broth. Just before serving, some sour cream is stirred into the beef mixture to add flavor and create a wonderful creamy texture. (Feel free to stir in a little more sour cream if you prefer.)

Ingredients

  • 1 1/2 to 2 pounds lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 cup beef bouillon or broth
  • 1 medium onion, chopped
  • 3 tablespoons sour cream (at room temperature)

Directions

Brown ground beef in skillet over medium heat just until pink is gone, stirring frequently to break up into bite-size chunks (about 7 minutes). Drain grease from skillet, then sprinkle meat with salt and pepper to taste. Add onions to meat and cook for an additional 2-3 minutes, stirring occasionally.

In a separate saucepan, melt 1 tablespoon butter. Whisk flour into butter, then gradually stir in beef broth, whisking continuously and cooking until thickened and smooth. Pour sauce into beef and stir. Cover and simmer over low heat for 10 minutes. Stir in sour cream and heat through but do not boil (about 1-2 minutes). Serve over noodles or rice.
