Cook Time:  20-25 minutes
Tips:  Store in refrigerator if squares are not eaten within a couple hours, then heat leftover squars for 10-15 seconds in microwave to soften.

Peanut Butter Chocolate Squares is a delicious bar cookie recipe that entertains the well-loved flavor combination of peanut butter and chocolate, as well as some rolled oats, giving these dessert
 

bars a wonderful chewy texture.

 

Bar cookie (aka cookie square) recipes are popular because they incorporate all the flavors and textures of a large batch of cookies, yet with a lot less effort - and these bar cookies certainly step up to the plate!

 

These chocolate and peanut butter bars start with a cookie dough made with peanut butter and oatmeal; two ingredients that taste incredible together and create wonderful chewiness. The dough is then pressed into a large baking pan and baked. After baked and while still hot, chocolate chips are sprinkled over the top and allowed to soften from the

heat. The chips are then spread around, creating a chocolate topping. A thin glaze made with confectioner's sugar and peanut butter is then drizzled over the top, making this a 3-layer cookie bar recipe that tastes great warm and melty or cooled (giving the chocolate a little crunch).

Ingredients

 

Squares

1/2 cup peanut butter

1/2 cup butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1/2 teaspoon vanilla

1 cup flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup uncooked oats or instant oats

 

1 1/2 cups chocolate chips (9 ozs.)

 

Glaze

2/3 cup confectioner's (powdered) sugar, sifted

1/4 cup peanut butter

3-4 tablespoons milk

 

Directions

 

Dough

Preheat oven to 350° F.

 

In an electric mixer bowl, combine together peanut butter, butter and granulated and brown sugars and beat until creamy. Add egg and vanilla and mix on low medium until creamy.

 

In a separate medium mixing bowl, whisk together flour, soda, salt and oats. Set electric mixer to low speed and gradually add flour mixture to peanut butter mixture. Continue mixing (scraping sides and bottom to incorporate all) just until fully blended. Transfer dough to a buttered 9 x 12-inch pan and spread out evenly. Bake for 20-25 minutes.

 

Remove from oven and immediately sprinkle chocolate chips evenly all over top. Let stand 5 minutes, then spread chips to completely and evenly cover top.

 

Glaze

Combine sifted confectioner's sugar with peanut butter and milk, adding only enough milk to make a thin drizzling consistency. Drizzle evenly over the chocolate layer. Allow to cool for 30 minutes or more, then cut into bars.
