1/2 cup peanut butter
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup uncooked oats or instant oats
1 1/2 cups chocolate chips (9 ozs.)
Glaze
2/3 cup confectioner's (powdered)
sugar, sifted
1/4 cup peanut butter
3-4 tablespoons milk
Directions
Dough
Preheat oven to 350°
F.
In an electric mixer bowl, combine
together peanut butter, butter
and granulated and brown sugars and beat until
creamy. Add egg
and vanilla and mix on low medium until creamy.
In a separate medium mixing bowl, whisk
together flour, soda, salt and oats. Set electric
mixer to low speed and gradually add
flour mixture to peanut butter mixture. Continue
mixing (scraping sides and bottom to incorporate
all) just until fully blended. Transfer dough to a buttered 9 x 12-inch pan and
spread out evenly. Bake
for 20-25 minutes.
Remove from oven and
immediately sprinkle chocolate chips evenly all over top. Let
stand 5 minutes, then spread chips to completely and
evenly cover top.
Glaze
Combine
sifted confectioner's sugar with peanut butter and milk,
adding only enough milk to make a thin drizzling consistency.
Drizzle evenly over the chocolate layer. Allow to
cool for 30 minutes or more, then cut into bars.
