Tips:   Other nuts may be used, such as pecans, cashews, walnuts or almonds. Any type of sandwich bread may be used, though for a healthy sandwich, whole wheat or whole grain bread is recommended. Red or green grapes may be used, though red grapes provide more color.
Suggestion:   Delicious served for lunch or as a light and refreshing dinner. Also delicious served with fresh seedless grapes on the side.
Most of us at one time or another have enjoyed a chicken salad sandwich. Chicken salad sandwiches are a nice alterntive to tuna sandwiches, though can often share some similar ingredients. Chicken salad sandwiches have a light and fresh flavor, and depending on the filler ingredients used, can be quite a healthy sandwich!

Chicken salad sandwich recipes usually start with a basic combination of ingredients, such as chunks of chicken, mayonnaise, seasonings, and perhaps some diced celery and onion. This Chicken Salad Sandwich with Grapes recipe

(Tip: If desired, other nuts can be used instead of pistachios, such as walnuts, pecans, almonds or cashews.)

To turn this chicken salad sandwich recipe into a healthy chicken salad sandwich, simply use some light mayonnaise or mayonnaise made with olive oil, and use a healthy style bread, such as whole wheat or whole grain. (Note: Either canned chicken breast, chicken from a cooked rotisserie chicken from the grocery store or chicken breast you cooked yourself can be used.) As a light alternative, the combined chicken salad ingredients can also be served over a bed of torn lettuce or whole lettuce leaves, turning this chicken salad sandwich recipe into a cool and refreshing chicken salad! Whether served as a sandwich or a salad, a side of grapes (red or green) makes a great accompaniment!

Ingredients

  • 20 oz. cooked chicken chunks (canned, rotisserie or cooked chicken breast)
  • 1/3 cup diced celery
  • 1/3 cup diced onion
  • 1/3 cup diced red bell pepper
  • 1 cup mayonnaise
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 cup chopped pistachios (or other desired nuts)
  • 1/2 cup diced seedless grapes (red or green)
  • 8 slices healthy sandwich bread, preferably whole grain or whole wheat

Directions

In a medium mixing bowl, combine chicken, celery, onion, bell pepper, mayonnaise, white pepper, onion powder, garlic powder, pistachios and grapes. Toss gently to combine.

Spread chicken salad evenly onto 4 slices of bread. If desired, place any type of lettuce leaves over chicken salad. Top each with another slice of bread. (Tip: To help hold lettuce in place, spread a thin layer of mayonnaise on each top slice of bread.) Serve as whole sandwiches or slice into halves or quarters.
