Cajun Meatloaf

Made with lean ground beef and ground pork, Cajun Meatloaf is full of lively flavor and is made with the perfect blend of spices. This meatloaf recipe is easier than ever to
put together, and takes only 1 hour to cook in the oven. Diced bell pepper, onions (green and yellow), celery and jalapenos are sauteed with a mixture of condiments and Cajun-style spices, bringing amazing flavor and moisture to this dish. (Note: Photo above shows this recipe made with red bell pepper, though green or yellow pepper can be used instead if preferred, keeping in mind that red and yellow peppers have a sweet flavor, while green peppers have a bit of a 'bite' in terms of flavor.) The sauteed vegetable mixture is combined with the ground beef and ground pork, along with some bread crumbs and eggs, and the mixture is transferred to a loaf pan and placed in the oven. As with most other meatloaf recipes, any leftovers from this Cajun Meatloaf recipe can be served between two slices of bread or toast and topped with lettuce, making a fabulous sandwich!

Ingredients

  • 1/4 cup butter
  • 1/2 cup chopped green onions
  • 1 cup finely diced sweet red, green or yellow pepper
  • 1 cup finely diced onion
  • 1/4 cup finely diced celery
  • 2 jalapeno peppers, seeded and finely diced
  • 1/2 teaspoon cayenne pepper
  • 1 1/4 tablespoons hot pepper sauce
  • 1 1/4 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 2 tablespoons to 1/4 cup Cajun spices (dried bottled blend)
  • 1/3 cup milk
  • 1/3 cup steak sauce
  • 1/3 cup ketchup
  • 1 lb. lean ground beef
  • 3/4 lb. ground pork
  • 2 eggs
  • 3/4 cup bread crumbs

Directions

Preheat oven to 350° F.

Melt butter in a large skillet. Add green onions, pepper, onions, celery and chiles, and saute until tender (about 10 minutes). Stir in cayenne pepper, hot pepper sauce, Worcestershire sauce, bay leaves and Cajun spices and saute for 5 minutes longer.

Stir in milk, steak sauce and ketchup. Simmer for 5 minutes. Remove bay leaves, then transfer mixture to a large mixing bowl. Add beef, pork, eggs and bread crumbs and mix well. (Tip: Can be mixed using a wooden spoon, though mixing with hands works best.)

Pack the mixture into a 9 x 5-inch loaf pan. Cover with aluminum foil. Place loaf pan in another larger baking pan. Pour enough hot water into the larger baking pan to reach about 1/3 of the way up the loaf pan.

Bake meatloaf in the pan of hot water for 30 minutes. Remove aluminum foil and bake for an additional 30 minutes. Remove from the oven and allow to cool for about 5 minutes before slicing. (Note: Once meatloaf has slightly cooled, you can carefully remove entire loaf with 2 large strong metal spatulas and transfer to a cutting board to slice.)
