Cajun Meatloaf
Yield:   6-8 servings
Cook Time:   1 hour, 15 minutes
Tips:  To reduce spice level, use less chiles.
Suggestion:  Cold leftovers are delicious served as a sandwich meat.
Ingredients
  • 1/4 cup butter
  • 1/2 cup chopped green onions
  • 1 cup finely diced sweet red, green or yellow pepper
  • 1 cup diced onions
  • 1/4 cup diced celery
  • 2 jalapeno chiles
  • 1/2 teaspoon cayenne pepper
  • 1 1/4 tablespoons hot pepper sauce
  • 1 tablespoon plus 1 1/2 teaspoons Worcestershire sauce
  • 2 bay leaves
  • 2 tablespoons to 1/4 cup Cajun spices (dried bottled blend)
  • 1/3 cup milk
  • 1/3 cup steak sauce
  • 1/3 cup ketchup
  • 1 lb. lean ground beef
  • 3/4 lb. ground pork
  • 2 eggs
  • 3/4 cup bread crumbs
Directions
Preheat oven to 350° F.

Melt butter in a large skillet. Add green onions, pepper, onions, celery and chiles, and saute until tender (about 10 minutes). Stir in cayenne pepper, hot pepper sauce, Worcestershire sauce, bay leaves and Cajun spices and saute for 5 minutes longer.

Stir in milk, steak sauce and ketchup. Simmer for 5 minutes. Remove bay leaves, then transfer mixture to a large mixing bowl. Add beef, pork, eggs and bread crumbs and mix well. (Tip: Can be mixed using a wooden spoon, though mixing with hands works best.)

Pack the mixture into a 9 x 5-inch loaf pan. Cover with aluminum foil. Place loaf pan in another larger baking pan. Pour enough hot water into the larger baking pan to reach about 1/3 of the way up the loaf pan.

Bake meatloaf in the pan of hot water for 30 minutes. Remove aluminum foil and bake for an additional 30 minutes. Remove from the oven and allow to cool for about 5 minutes before slicing. (Note: Once meatloaf has slightly cooled, you can carefully remove entire loaf with 2 large strong metal spatulas and transfer to a cutting board to slice.)
