Peach Salsa

Peach Salsa
Yield:   About 4-5 cups of salsa

Tips:  Maybe be made in advance and refrigerated 1 hour to overnight until ready to use. Canned peaches packed in water may be used instead of fresh peaches if peaches are not in season.
Suggestion:   Delicious served with most any type of fish, chicken or pork.
This Peach Salsa recipe features a fresh and colorful salsa with a mildly sweet flavor and just a hint of spice. Peach Salsa is a

This gorgeous fresh salsa recipe is made by combining diced peaches, red and orange bell peppers, red onion, jalapeno, sliced green onions and chopped cilantro leaves. These fresh ingredients are then tossed with some apricot preserves, and the mixture is briefly chilled in the refrigerator to give the ingredients time to mingle together. (Tip: If peaches are not in season and your grocer does not carry them yet, you can substitute the fresh peaches with two cans of sliced peaches packed in water.)

Ingredients

  • 3-4 ripe yet firm peaches (or 2 15-oz cans sliced peaches packed in water)
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced orange bell pepper
  • 1/3 cup diced red onion
  • 1/3 cup sliced green onions
  • 1/3 cup chopped fresh cilantro leaves
  • 1 jalapeno, seeds removed and minced (or leave seeds in for more spice)
  • 1 cup apricot preserves

Directions

In a medium mixing bowl, combine all ingredients and gently toss to thoroughly combine. Cover and chill in refrigerator for 1-2 hours. Serve with most any type of fish, chicken or pork.
