Ingredients
Casserole
1 6-oz. package corn
chips (such as Fritos), coarsely crushed
1 15-oz. can chili with
beans
1 lb. ground beef
3/4 cup salsa (any kind)
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1 tablespoon chili
powder
1 cup shredded cheddar
cheese
Garnishes
(optional)
sliced or chopped
tomatoes
torn or shredded lettuce
avocado slices or chunks
sour cream
salsa
Directions
Preheat oven to 350°
F. Spray an 8x8 or 9x9-inch casserole dish with
nonstick spray. Arrange 2/3 of corn chips evenly in
bottom of casserole dish. Spread chili with beans
evenly over chips. In a large skillet, brown ground
beef over medium heat. Drain any fat or liquid from
skillet, then stir in salsa, salt, pepper, cumin and
chili powder.
Spoon ground beef
mixture over chili in casserole dish. Top beef
mixture with
remaining corn chips, then sprinkle with cheese.
Bake for 30 minutes or until thoroughly heated and
cheese has melted. Serve with your choice of
garnishes as suggested above. |
