Taco Casserole takes very little effort to make, tastes great and is enjoyed by all ages. This easy casserole recipe is made with ground beef with some seasonings, a can of chili with beans, your
 

favorite salsa, cheddar cheese and corn or tortilla chips. This dish will satisfy big hunger at a very reasonable cost!

 

The above photo shows this casserole served with sides of torn lettuce, tomato slices and avocado slices, ingredients traditionally served with tacos. Taco Casserole also tastes great accompanied by sour cream and any salsa of your choice, or any other ingredients you might enjoy with tacos or similar Mexican recipes.

 

This recipe uses corn chips as the bottom and top layers of this casserole, but you can also use coarsely crumbled tortilla chips instead if you wish. Leftovers can be heated in

the microwave, but if you'd like to crisp up the corn or tortilla chips (they tend to soften in the refrigerator), it's best if you reheat this dish in the oven (350° F. for about 10-15 minutes or until heated through, depending how much casserole you have leftover).

Ingredients

 

Casserole

1 6-oz. package corn chips (such as Fritos), coarsely crushed

1 15-oz. can chili with beans

1 lb. ground beef

3/4 cup salsa (any kind)

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon cumin

1 tablespoon chili powder

1 cup shredded cheddar cheese

 

Garnishes (optional)

sliced or chopped tomatoes

torn or shredded lettuce

avocado slices or chunks

sour cream

salsa

 

Directions

 

Preheat oven to 350° F. Spray an 8x8 or 9x9-inch casserole dish with nonstick spray. Arrange 2/3 of corn chips evenly in bottom of casserole dish. Spread chili with beans evenly over chips. In a large skillet, brown ground beef over medium heat. Drain any fat or liquid from skillet, then stir in salsa, salt, pepper, cumin and chili powder.

 

Spoon ground beef mixture over chili in casserole dish. Top beef mixture with remaining corn chips, then sprinkle with cheese. Bake for 30 minutes or until thoroughly heated and cheese has melted. Serve with your choice of garnishes as suggested above.
