Deep dish pizza was invented in Chicago in 1943, and is enjoyed by those who love a very meaty and cheesy pizza. The meat ingredients and pizza sauce are sandwiched in between two layers of mozzarella cheese and baked in a pan with sides to allow for the depth of this pizza. The dough is made with a small amount of corn meal which adds a little added flavor and texture. This is for big pizza lovers!

Ingredients

 

Dough

1/4 teaspoon sugar

1/2 cup warm water

1 package active dry yeast

1 1/2 cup flour, plus additional for dusting

1/4 cup cornmeal

1/2 teaspoon salt

1 tablespoon olive oil

ham

bulk Italian sausage

 

Directions

 

Place warm water in a small mixing bowl. Add to warm water yeast and sugar and let stand until mixture appears foamy (about 5 minutes).

 

In a separate large mixing bowl, whisk flour, cornmeal, oil and salt. Make a well in the center of the flour mixture, then pour yeast and warm water mixture into well. Gradually stir flour into the yeast and water mixture with a fork until dough follows fork around the bowl. Once dough is thoroughly mixed, transfer to a flat work area. Sprinkle a little flour on work surface area. Knead dough by folding and refolding for about 7-10 minutes. Form into a ball.

 

Coat a large bowl with oil, then transfer dough ball to bowl. Cover with a light weight towel or plastic wrap and place in a warm place until dough rises to double its size (about 1 hour). Transfer dough to work surface and knead again for about 1-2 minutes.

 

Roll dough into a 13-inch circle, then transfer to an oiled 12-inch pizza or pie pan. Pinch the edges of the dough to make a rim. Spread with pizza sauce, then sprinkle all but a handful of mozzarella cheese over dough. Sprinkle meats on top of cheese. Top with remaining mozzarella cheese, then place in a warm area and cover with a towel. Let rise for about 30 minutes.

 

While waiting for dough to rise, preheat oven to 475° F. Once dough has risen, bake pizza until crust is golden (about 25 minutes). Allow pizza to stand for about 5 minutes before slicing.
