The beauty of this Thai Chicken Fettuccine recipe is that you can make it mild, medium or spicy. This fettuccine recipe as written is mild and flavorful, but you can easily spice it up with some
 

Chili Garlic Sauce (found with other Asian spices in most grocery stores). You can also adjust the spicy element by choosing mild, medium or spicy picante sauce (or other salsa).

 

This easy chicken recipe features thin slices of chicken breast and fettuccine noodles tossed with a mild (or spicy, if you like) sauce made with peanut butter, honey, picante sauce (or other salsa), orange juice, soy sauce and ginger. You can have this tasty chicken noodle dish ready to serve in only about 15 minutes! For added flavor and crunch, you can also add about 1/4 cup of peanuts while tossing the noodles and

chicken with the sauce. Whether you choose to make this chicken dish mild or spicy and with or without peanuts, you can't go wrong!

Ingredients

 

1 tablespoon olive oil

1 lb. boneless, skinless chicken breast (about 2 breasts), thinly sliced

1 cup picante sauce

1/4 cup chunky peanut butter

2 tablespoons honey

2 tablespoons orange juice

1 teaspoon soy sauce

1/2 teaspoon ground ginger

3 cups hot cooked fettuccine

chopped fresh cilantro for garnish (optional)

 

Directions

 

In a medium mixing bowl, whisk together picante sauce, peanut butter, honey, orange juice, soy sauce and ginger. (Note: If you prefer a little spice, add 1/4-1/2 teaspoon chili garlic sauce, taste-testing as you add to reach desired spiciness). Set aside.

 

Heat oil in a skillet over medium-high heat. When oil is hot, add chicken and cook, stirring frequently until lightly browned (about 5 minutes). Add sauce (and peanuts if you are using) to the chicken and stir until fully mixed. Add fettuccine to chicken mixture and toss until evenly coated. Garnish servings with chopped cilantro and/or cilantro sprigs if desired.
