Orange Cinnamon Crumb Cake

Tips:   The orange used for orange zest may also be used to create fresh squeezed orange juice - though it is likely another orange (or prepared orange juice) will be needed to produce enough orange juice for the recipe.
Suggestion:   Delicious as a mildly sweet dessert or snack accompanied by coffee or hot tea.
Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 4 tablespoons butter, at room temperature
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • dash of salt
  • 1 large egg
  • 1/2 cup orange juice
  • 1 teaspoon finely grated orange zest (peel)
Directions
Preheat oven to 350° F. Grease and flour an 8-inch-square baking pan.

Add flour, sugar and butter to a medium-sized mixing bowl and blend using a pastry blender or fork until the mixture resembles coarse meal.

Measure 1/2 cup of the flour, butter and sugar mixture and pour into a separate small mixing bowl. Add cinnamon and whisk or stir with fork to combine. Set aside.

To the flour, sugar and butter mixture in the larger mixing bowl, add baking powder and salt and whisk or stir with a fork to combine.

In another separate small mixing bowl, whisk (or beat with a fork) egg with orange juice and orange zest until well blended. Using a fork, stir the egg and orange juice mixture into the dry cake ingredients in the larger bowl, sitrring just until evenly moistened. Pour cake batter into the prepared baking pan.

Sprinkle the reserved cinnamon crumb topping mixture evenly over the batter in the baking pan. Place in oven and bake for 20-25 minutes, or until a toothpick inserted into center of cake comes out clean. Allow cake to sit for 2-3 minutes before slicing and serving.
